freekeh & mung bean veggie soup

Another blast of iron and protein in the form of much-needed hot soup on a very wintry day, when I felt like I might be coming down with a cold.

I started by sauteing onions, carrots, celery and a few cloves of fresh garlic in olive oil, with lots of black pepper, a black cardamom pod, salt, and a dash or two of cayenne pepper.

1/4 C mung beans, 1/2 C freekeh.

A little turmeric to make it pretty. I also added cumin, and a light sprinkling of cinnamon.

I boiled it in about 2 1/2 C water. Once the beans and freekeh seemed about done (35-40 minutes), I added 1/4 C frozen peas.

Pretty sure the heat from the broth, and spicy heat from the black pepper & cayenne, saved me from getting a cold. Plus…it tasted good : )
