Pizza Week 2013, Day 1: Mexican Pizza #2

My very first Pizza Week pizza!!! If you’ve been following me the past few days, you probably know all about Pizza Week and Cheesefare. I hope you’re joining us in the pizza lovin’!

I kept the toppings simple: onion, tomato & green pepper.

Then I added salt, pepper, garlic, onion powder, cumin, dill, smoked paprika & cayenne.

Add some olive oil, stir to coat.

The dough recipe above makes enough dough for four small pizzas. I tore off 1/4 and pressed it out on my greased pizza pan using my fingers, then coated it with a little olive oil.

Spread on a layer of refried beans, and covered that with the veggies.

Then added a vegan cheese. You can see what I did on the original Mexican Pizza HERE. I’m saving the tahini “cheese” sauce for Lent proper.

I baked this at 500 degrees for about 12 minutes. Depending on your oven and the thickness of your dough, you may have to lower the heat a little and let the pizza cook longer to make sure the crust gets golden brown on the bottom.
