Strawberry Teff Porridge

I realize I’m posting a lot of teff based recipes lately. I guess that’s what happens when you have 50+ pounds of teff flour at your disposal. Anyway, this is really good, and hopefully my blog will be the top listing in searches for teff recipes!

It seems like strawberries are only good for a day or two after we buy them. We should try organic, but…we never do. This is about half a pound, in a small saucepan with a tablespoon or two of water. Bring it to a quick boil, then lower the heat to medium and let the strawberries break down at a very low boil.

Sweeten to taste using the sweetener of your preference. I used a heaping tablespoon of coconut sugar.

Just so you wouldn’t get bored, I mixed it up a *little*. I usually use 1/2 C teff flour, but I replaced 1/8 C with oat flour.

1 1/2 C water.

Stir. Keep stirring over medium heat until it doesn’t get any thicker. That’s when it’s done.

Garnish with fresh strawberries. I also sprinkled mine with a little more coconut sugar. Yum. I bet a little chocolate added in would be amazing.
