Keepin’ it simple.

Brown lots of onions in olive oil over medium heat, stirring occasionally. When they’re nice and soft, add thick slices of tomato. Let them brown on each side, but be careful not to cook them too long or they’ll just fall apart.

Make a sandwich. I’m using rye bread with garlic spread on one side and spicy mustard on the other, and a few leaves of romaine.

I heart mustard. I put some on the side for dipping, but it was also great without. Eat as you please & enjoy.

  1. Yum! That’s looks delish! BTW, the Lincoln Tomato plants are doing well. . . .no blossoms yet but it won’t be long. Every time it rains the plants practically double in size! When the time comes, would you like the very first Lincoln Tomato?
