spicy cheesy quinoa

Last night I opened Wayfare‘s Mexi Cheddar “We Can’t Say It’s Cheese” spread. I’ve tried all three flavors now (the other two are cheddar & hickory cheddar) from the big ol’ box they sent me. The flavors are only mildly different, this one seemed to have a hint of cumin but I couldn’t place the other seasonings. I knew it would be a good creamy base that just needed a little kick. So…

Cook about 1 C chopped onion and three cloves of garlic in 2 – 3 tablespoons of olive oil, with pepper to taste, over medium heat until onions are clear.

Add 1/2 C quinoa,

and one cup of water. Cook according to instructions (on my box: bring to a boil, cover and simmer until water is absorbed, approximately 15 minutes).

When the quinoa is done,

add one large tomato, chopped. You can peel yours, I didn’t feel like it. Add salt to taste and a couple shakes of cumin, cover and let cook on low for about 5 minutes so tomatoes will soften a little.

Add Frank’s Red Hot Sauce to taste. I used about 20 shakes.

Mexi Cheddar.

Add 3 heaping tablespoons and stir.

Top with a little more Frank’s. Nutritional yeast optional, but highly recommended. This made two large servings, both of which I ate myself 🙂
