This lovely green sandwich is packed with tons of iron, between the 39% in one teaspoon of spirulina, and another 15% in one slice of Feldkamp Fitness bread. This is another fine way to enhance, rather than completely hide, the flavor of the spirulina.
The ingredients. You could probably use plain Vegenaise or even a tahini sauce in place of the Vegenaise horseradish sauce.
Since I was only making this for little ol’ me, I used only 1/2 avocado. Mash lightly, then add 1 tsp spirulina, 2 tsp Vegenaise, 1 – 2 tsp sweet pickle relish (or to taste).
Stir it up. I ended up adding a squirt of mustard, that is optional.
Spread thickly on a slice of Feldkamp bread – I cut mine in half to make it easier to eat.
It’s very good sprinkled with salt. The sandwich is so filling, I did not need to eat another thing with it. It kind of *almost* sort of tasted like an egg salad sandwich 🙂
