Italian-ish sandwich with tahini mozzarella

You know how I love sandwiches. This past Sunday the family dinner was at our house, and my dad made grilled Italian sausage sub sandwiches for everyone but moi, of course. I had some leftover seitan bacon, and I whipped up a mozzarella-type tahini sauce using my Wayfare vegan sour cream. Check it out.

We cooked red, green & yellow bell peppers, and lots of onion, in olive oil with salt, pepper and a touch of garlic until they were nice and brown.

My dad made the marinara sauce – tomato paste thinned down with water, with olive oil, salt, pepper, garlic, oregano, basil, parsley, and a pinch of sugar.

For the mozzarella sauce: 2 Tbsp of tahini, 2 Tbsp Wayfare sour cream (actually tastes more like yogurt), onion powder and salt to taste. 2 tsp Dijon mustard.

Stir. Add water a little at a time until creamy, and thin enough to spoon onto your sandwich.
We popped our sandwiches under the broiler until the cheese (and “cheese”) began to brown.

Now you see where I got my love of carbs – I suggested we have a salad with the sandwiches so the meal wouldn’t be too heavy, and I got a blank stare. To be fair, we did end up having salad, too, it just didn’t make it into the pictures.
