I didn’t feel up to cooking anything very complicated for dinner tonight, so…I made oatmeal. But I made it special! Fast, easy, oil free & perfect for a strict fasting day. Bonus: dark chocolate for dinner. Great for breakfast, too.
Just make the oatmeal as directed. For myself, I did one serving – so I boiled 1 C water, and added 1/2 oats. While the oatmeal’s doing its thing, chop up a couple squares of the chocolate and as much dried mango as you’d like. I used the extra dark, 90% cocoa chocolate.
The extra dark chocolate gives it a very rich flavor, but it’s also a little bitter. I sweetened mine with agave nectar. I recommend just adding a little tiny bit at a time, leaving it as chocolatey and cocoa-y as you can. Optional: pinch of salt.
I garnished mine with extra mango to boost the sweetness. You could also add a little mango to the the boiling water to sweeten it. Although I’m sure plain mango would be just fine, I liked the heat from the chile spice. If you only have plain mango and want to, um, what’s that old phrase…”kick it up a notch,” just add a dash of cayenne. Or if you’re my mom, add a ton of cayenne.
