Srsly, another bean dip. I made this for the potluck I went to last night.
Since I somehow let myself run out of olive oil, I made it a little differently this time. Would you believe I sauteed the onions and garlic in margarine? Then added 1 can each of drained and rinsed cannellini beans and black-eyed peas.
I added LOTS of fresh dill. It was pretty good, although next time I’d cut down on the salt – there was already a little in the margarine, and the refried beans. And the chips we ate it with! So that’s probably enough.
