bean dip #5

Srsly, another bean dip. I made this for the potluck I went to last night.

Since I somehow let myself run out of olive oil, I made it a little differently this time. Would you believe I sauteed the onions and garlic in margarine? Then added 1 can each of drained and rinsed cannellini beans and black-eyed peas.

I seasoned them with a little salt, pepper, onion powder, a tiny bit of cayenne, turmeric, and cumin, and fresh dill.

Then added about half a can of refried beans. I stirred in the beans and thinned the dip down with a little water until it was creamy, then seasoned again as needed.

I added LOTS of fresh dill. It was pretty good, although next time I’d cut down on the salt – there was already a little in the margarine, and the refried beans. And the chips we ate it with! So that’s probably enough.
