We had a pizza party for dinner today! We each made our own pizzas.
Here’s mine – starting with eggplant, onions, mushrooms, spinach, kalamata olives, sundried tomatoes, and a tahini sauce,
daiya cheddar. Then I drizzled olive oil over it and add a bit more sauce. Popped it in the oven.
The sauce over the daiya worked really well, I think the trick is to have sauce on both the top and bottom. When the sauce heats up, it helps melt the “cheese”.
I have one more piece left and 45 minutes to eat it. I’m sure gonna try.
I also have one piece left from our lunch at Brick Road pizza yesterday!
I went all out. A black bean & salsa “sauce” with roasted garlic, onions, roasted potatoes, and mushrooms. By the way, when you ask for roasted garlic at Brick Road Pizza, you better really want garlic. I think there were about two heads on this pizza. I couldn’t eat it all.
