Happy Thanksgiving!

A belated Thanksgiving post to ask: What did you have to eat?

I was very lucky (and thankful!) to have a nice full plate of vegan foods. Syrian salad made by Tete, my aunt made roasted veggies, I made stuffing & scalloped cabbage, dad made sweet potatoes, the mashed potatoes were a joint effort, and I made spinach pies.

Cousin made the cranberry sauce…

aaaaaaaaaand brought vegan cookies from Earth Fare! These are great because you buy the dough and bake them at home, so they were nice and fresh. And I got to drink Starbucks coffee from Tete’s Secretary of the Year mug. I like to use it and pretend it was awarded to me 🙂 Maybe one day.

Around the holidays I feel very blessed to have so many friends and family to spend time with, even if most of the year they’re far away. I hope you all had a wonderful Thanksgiving Day!

  1. Can you post or share how you made the scalloped cabbage, and the spinach pies?? Wow, they both look so good. Your stuffing looks like corn bread, is it? I made cornbread stuffing with chopped celery, onion, & kale. Also, mashed potatoes made with Earth Balance, nutritional yeast, dried chives, & dried dill. Vegan mushroom gravy. Fried tofu. Mashed sweet potatoes. It was all delicious!

    • Oh wow, it sounds like you had a great Thanksgiving meal! The cornbread stuffing sounds wonderful.
      Mine was just made with store bought ciabatta bread with chestnuts, mushrooms, a few cloves of garlic, and tons of green onions. I’ll be posting the cabbage recipe soon, and if I don’t already have the spinach pies posted (but I think I do somewhere??) I’ll post once I have some pictures of the process. I think I posted it before but without many pictures because I was by myself, and had no way to photograph myself folding the pies 🙂
