I can’t believe it was more than seven years ago I found this recipe for Tasty Buns on AllRecipes.com, wrote it down in my little food journal, used it once, and promptly forgot about it. The original recipe isn’t vegan, but it’s easy to veganize – simply replace the dairy milk with the vegan milk of your choosing. This time, however, I decided to also make it oil free.
Turn the dough out onto a floured surface and let it rest under the bowl for 10 minutes. Shape into 12 balls and place on a greased baking sheet to rise until doubled in size. Bake at 400 degrees for 12 – 15 minutes.
I actually let the dough rise in the bowl for about an hour while I was in church, then shaped them into 18 balls, and placed them in a pan lined with parchment paper to bake. The coconut milk makes them denser, you could bake them at a lower temperature for a few minutes longer. Because of the fat in the coconut milk, they still brown nicely without using oil or having to stick them under the broiler.

4 – 5 C all purpose flour
2 packets yeast
1 can (12 – 14oz) full fat coconut milk
1 tsp salt
These buns are perfect for pulled jackfruit or veggie burgers, or just on their own. They’re a little on the sweet side and have a mild coconut flavor that would be wonderful with BBQ sauce.
